WP_000914I’ve just had the great pleasure of getting to know a completely new cut of beef to me: The brisket. This extremely tough muscle supports about 60% of the body weight of the cow and is extremely tasty when slow cooked in a smoke grill for hours, hours and hours. Supplement with pulled pork, coleslaw, jalapeƱo cornbread, pico de Gallo and borracho pinto beans and you got yourself a feast!
